Natural sparkling wine produced according to “méthode traditionelle” (traditional bottle fermentation). Blanc de Blancs with fine perlage, zero dosage and without SO2 addition. Fine expressive nose, hints of white peach paired with lime and dried apple peel. Animating acidity, great drinking pleasure.

The burgundy vines for the base wine of Tement Brut Nature grow on single vineyard Sulz which is a closed mountain basin with Southern faced exposition. The vines grow on cool chalky marl soil and are surrounded by a warm microclimate.

The grapes (85 % Morillon & 15 % Weissburgunder) were carefully harvested by hand. A particularly gentle pressing was followed by spontaneous fermentation. Maturation “sur lie” in neutral barrels for more than 50 months followed by another 30 months bottle fermentation (“Méthode Traditionelle”).

Appellation: Österreichischer Sekt Steiermark G.U. Große Reserve

Soil: Closed and therefore somewhat warm mountain basin with a South - Southwestern exposition. A play field for our Burgundy grape varieties. Profound, loamy chalk-marl soil, which is called “Opok” in that region. The highest point lays on 490 m above sea level and works best for wines full of finesse which are destined for a long life.

Vinification: After natural fermentation 50 months “sur lie” in neutral oak barrels. Then fermented another 30 months in the bottle (“méthode traditionelle”). Blanc de blanc, zero dosage, without SO2 addition.

Alcohol: 12 % vol.

More than 15 years ago we started taking the first steps towards organic farming. We are now in the phase to convert to biodynamics. A logical step for us and a beginning without end. Every year we learn something new, observe nature and get closer to it bit by bit. We see our business as a form of modern circular economy in which wine is part of an overall concept. Partnerships with horse and cattle farmers have just as much space here as the use of the company’s own forest for energy production. Wine as a way of life.
