Domaine Jean Collet

Through sustainable and organic farming, the terroir of Chablis can be optimally utilised. A large part of the domain is organic certifiedBy controlling the yields, Domaine Jean Collet is able to harvest concentrated, high-quality grapes that give the wines complexity.
The focus is on expressing the terroir of the wines and intervening as little as possible during vinification. Spontaneous fermentation is used in the cellar and the wines are vinified on a small scale, as each cuvée is matured in its own way in order to respect and take into account the unique and complex characteristics of the respective terroir.
The greatest focus in vinification is the respective terroir. In the cellar, the wines are fermented exclusively with natural yeast and mechanical techniques are deliberately avoided.

Chiara Condello, Emilia Romagna
Young and smart winemaker Chiara founded her winery in 2015. The wines are characterised by their origin and are very delicate, feminine and juicy.
The winery is located in Fiumana di Predappio, in the Romagna region, an area famous for Sangiovese. Chiara’s passion for this grape variety and her home prompted her to start the winemaking adventure and give the Sangiovese grape a new lease of life.
The vineyards lie between 150 and 300 metres above sea level. The soils are characterised by limestone and clay, with sandstone components known in the region as “spugnone”. The soil is able to store water at depth so that the vines can cope with hot and dry periods without getting stressed.
Chiara produces organic and works only by hand in the vineyards. No techniques are used in the cellar and practices are reduced to what is absolutely necessary. This is the only way to give the grapes the opportunity to express themselves in a puristic yet varietal way.
Area: 4.8 ha in own production
Annual production volume: approx. 28,000 bottles
Cultivation: organic
Grape variety: Sangiovese

Piero Benevelli
The small family winery in Monforte d’Alba, in the heart of the Langhe and DOCG Barolo, produces small quantities on a large scale. Today it is run by Denise and Massimo Benevelli.
Their deep connection with the land and their origins is reflected in their wines in a unique way. The low yields allow the family to keep all the steps, from the vineyard to the winemaking, in their own hands. The philosophy combines traditional craftsmanship with modern techniques. Sustainability, in particular respect for the environment and the soil, is of paramount importance to the family. This begins in the vineyard, with careful and attentive work, and continues in the cellar, where only natural yeasts are used and there is no clarification, fining or filtration. This philosophy continues throughout the winemaking process, as the wines are allowed to mature slowly and gently in large oak barrels (400 litres) and tonneaux (500 litres). The 11-hectare estate produces 55,000 bottles a year.
Piero Benevelli’s wines combine the power of Monforte d’Alba with a finesse and directness rare in this appellation. Elegant and deep wines that can be appreciated even at a young age.
Size: 11 hectares in Monforte d’Alba (Barolo)
Production: about 55,000 bottles
